Skillet Tortilla Pizzas

Crisp-edged tortillas, fast marinara, and melty mozzarella weeknight pizza without the dough wait.

Ingredients

  • 4 small flour tortillas
  • ½ cup marinara or crushed tomatoes
  • 1½ cups shredded mozzarella
  • ¼ cup grated Parmesan
  • Toppings: pepperoni, basil, red pepper flakes, olive oil

Instructions

  1. Heat a dry skillet over medium; crisp one side of each tortilla.
  2. Flip, spread marinara, cheese, and toppings; cover until cheese melts.
  3. Slide onto a board, slice, and serve hot.
