Soy-Preserved Shiitake Mushrooms

Ingredients
- 8 oz fresh shiitake, stems trimmed
- ½ cup soy sauce
- ¼ cup mirin
- 2 tbsp sugar
- 1 strip kombu (optional)
- Toasted sesame seeds to serve
Instructions
- Simmer soy, mirin, sugar, and kombu until sugar dissolves.
- Add mushrooms; simmer gently until tender and glossy.
- Cool in liquid for best flavor; slice and serve over rice or refrigerate up to a week.
