Super-quick fish curry

Love French Toast Casserole, but don’t have time to let it sit overnight? Not to worry this Instant Pot French Toast will be ready in no time.

Ingredients

  • 1 lb firm white fish, cut into pieces
  • 1 can coconut milk
  • 2 tbsp curry paste or powder (adjust to heat)
  • 1 onion, sliced
  • 2 tomatoes, chopped
  • 1 tbsp ginger-garlic paste
  • Fresh cilantro, lime, cooked rice for serving

Instructions

  1. Sauté onion until soft. Add ginger-garlic and curry paste; cook until fragrant.
  2. Pour in coconut milk and tomatoes; simmer 8 minutes to thicken slightly.
  3. Nestle fish in the sauce; poach gently until opaque and flaky.
  4. Finish with cilantro and lime. Serve over rice.
