Vegan ramen

Love French Toast Casserole, but don’t have time to let it sit overnight? Not to worry this Instant Pot French Toast will be ready in no time!

Ingredients

  • 4 servings ramen noodles (fresh or dried)
  • 4 cups mushroom or vegetable broth
  • 2 cups mixed mushrooms, sliced
  • 2 tbsp miso paste
  • 1 tbsp soy sauce
  • 2 cloves garlic, minced
  • Bok choy, scallions, sesame oil, nori for garnish

Instructions

  1. Simmer broth with garlic and mushrooms until flavorful.
  2. Whisk miso with a little hot broth; stir back into the pot with soy.
  3. Cook noodles separately; divide among bowls.
  4. Ladle broth over noodles, add vegetables, finish with scallions, sesame oil, and nori.
