Love French Toast Casserole, but don’t have time to let it sit overnight? Not to worry this Instant Pot French Toast will be ready in no time!

Ingredients
- 4 servings ramen noodles (fresh or dried)
- 4 cups mushroom or vegetable broth
- 2 cups mixed mushrooms, sliced
- 2 tbsp miso paste
- 1 tbsp soy sauce
- 2 cloves garlic, minced
- Bok choy, scallions, sesame oil, nori for garnish
Instructions
- Simmer broth with garlic and mushrooms until flavorful.
- Whisk miso with a little hot broth; stir back into the pot with soy.
- Cook noodles separately; divide among bowls.
- Ladle broth over noodles, add vegetables, finish with scallions, sesame oil, and nori.
